Frosting by the pound
I love eating cupcakes. I hate making them, because frosting each one individually is a real pain. But a cupcake is a perfect portion of cake, so every now and then I force myself to make a batch.
Tonight I made some cupcakes and while they were cooling I made a batch of chocolate frosting. Something went wrong in my head and apparently for a moment I thought I was making cupcakes for the entire US Coast Guard, because I made about 2 pounds of chocolate frosting. No kidding. I started with a full cup of butter! What was I thinking?
We seriously have frosting coming out of our ears. I made so much I had to divide it into small containers and freeze it. Maybe I'll make cupcakes again tomorrow...I have enough frosting.
